Moira Woodrow: At minimum you want the stem to go down into the fruit and be able to fill it with water up to an inch of the downstem. But the advantage would be to scoop out as much as possible without making the walls of the fruit to thin to withstand the weight of the hookah. More air space will allow for more air movement ! and will cool the smoke more by swirling around the surface of the water.
